The Hornet's Nest Galley: Providing Excellence in Food Service
The Hornet's Nest Galley's mission is to ensure the delivery of high-quality, nutritious meals to our customers, while maintaining a clean, sanitary, and welcoming dining environment. Our food service team is committed to providing not only regular meals but also comprehensive provisions support to the dining facility and the various tenant commands. This support is crucial, especially during unforeseen circumstances or emergencies when immediate meal service is required.
Our Dedicated Team
Our food service operations are carried out by a highly skilled team of professionals. The galley staff includes 25 Navy Culinary Specialists, whose expertise in food preparation and management ensures that all meals are both satisfying and nutritionally balanced. Additionally, we are supported by 22 civilian employees from Eggleston Food Services, who serve as Food Service Attendants, playing an essential role in maintaining the dining area's cleanliness and assisting with meal service.
Mission Flexibility and Readiness
A core component of our secondary mission is the effective management of provisions. The food service team maintains a supply inventory that includes up to seven days’ worth of most food items, ensuring that we are always prepared for short notice requirements. Fresh fruits and vegetables are maintained for a shorter shelf life of five days to ensure freshness. This load plan allows us to stay ready for any sudden operational demands or emergencies, ensuring that we can quickly mobilize and continue meal service without interruption.
To keep meals interesting and reduce redundancy, we operate on a 21-day cycle menu. This menu is designed to provide a diverse range of options, offering both variety and nutrition without the monotony that can be found in longer cycle menus, such as a 35-day plan. By rotating our offerings, we ensure that our customers enjoy wholesome, well-balanced meals that meet both their nutritional needs and food preferences.
A Focus on Quality and Efficiency
Our galley is designed with a cafeteria/buffet-style setup to provide the most efficient meal service possible. Every effort is made to serve food in the most hygienic conditions, maintaining the highest standards of cleanliness and food safety. Meals are prepared with great attention to detail, ensuring they are both visually appealing and properly prepared at the appropriate temperature. Our goal is to serve each meal on time, promptly and courteously, and to make sure that every customer enjoys their dining experience.
